Are Waffles Natures Perfect Food?
Waffles! When homemade, waffles are just a tad crispy on the outside, warm and soft on the outside and just about every Montana citizens breakfast favorite. Problem though is that most people don’t know how to make a great waffle and thus don’t even attempt a second batch. Here at 406 Cafe we’re going to show you how to make perfect breakfast (or dinner) waffles, every single time. You can do this… let’s get started!
Best Waffles Recipe in the 406
Follow these simple instructions and you’ll have made the best waffles ever! To start, be sure you have the following ingredients.
Waffle Ingredients
These measurements are precise. If you don’t have Buttermilk or Cream, you can use whole milk. Don’t try to use Skim milk, the recipe will fall flat. What we’re looking for here is the fat content of the milk. You’ll also notice that the salt and sugar are in the wet ingredients listing. We want to add the salt and sugar in the wet ingredients so that they break down faster. Also, if you don’t want to whisk the whites separately, you will need to whisk the wet ingredients for at least 2 minutes to ensure the eggs have some air.
TIP: Using warmed (not hot) ingredients (eggs, butter and milk) help to speed up the mixing process.
Wet Ingredients:
- 2 1/2 Cups Buttermilk (if you don’t have buttermilk, you can make some. Simply add 1 tablespoon of lemon juice to whole milk or cream; stir and let stand for 10 minutes). Don’t want to use Buttermilk? An alternative would be 2 1/2 cups of Cream (1/2 and 1/2).
- 2 Large Eggs
- 1/3 Cup Salted Butter – Melted, Wet. If you’re going to heat up the butter in a Microwave (Chef Mic) be sure the butter is wet, but cool enough to pour into the wet mixture when ready.
- 1 Teaspoon Vanilla
- 1/2 Teaspoon Sea Salt or Pink Himalayan Sea Salt.
- 1 1/2 Tablespoons Brown Sugar
Dry Ingredients:
- 1 3/4 Cups All-Purpose Unbleached Flour
- 1 Tablespoon Baking Powder
Utensils Needed:
- Waffle Iron – preferably a flat iron. These work best for waffles at a power setting of 4 1/4. If you have the round type which you spin, you’ll need to test for the perfect setting.
Whisk. Our waffle maker is a Cuisinart WAF-350C. - 2 Large Bowls (1 to mix ingredients and 1 to fluff the egg whites)
- Ladle
- Sifter
- Measuring Cups and Spoons
Waffle Instructions
- Separate the eggs placing the yolks only into your mixing bowl. Fluff the whites in a separate bowl. Again, if not separating the eggs white from yolks you’ll need to whisk the wet ingredients for at least two (2) minutes.
- To the egg yolks, add in the Brown Sugar, Vanilla, Salt and Buttermilk (or Cream). Whisk for a minute or so.
- Add in the melted butter, making sure Chef Mic didn’t overheat the butter – add in slowly while whisking. Whisk for another 30 seconds or so.
- Sift in the flour and baking powder. Mix thoroughly for 30 seconds.
- Fold in the egg whites.
- Let the mix sit for at least 5 minutes before using. This mix should appear very wet and possibly thin.
- Once waffle iron has reached the perfect temp, use your ladle to pour just enough batter to cover edge to edge and spread thin. DO NOT try to overload the waffle iron as the mix will spill out causing a super big mess that is often a pain to clean, and may impede your waffle making next weekend.
When using a waffle iron that has a red/green light – give the waffle iron about 30 seconds past the time it rings green – for our waffle iron (Cuisinart WAF-350C Belgian Waffle Maker), and most Cuisinart models, we have found that perfect waffles come out using a power setting of 4 1/4 on the dial.
